Summer in Malta is, well, simply amazing—the island's beauty comes to life. Long sunny days and warm evenings make the perfect setup for our most special tradition: the gathering of friends and family at BBQs by the sea. A time to kick back, enjoy the sun, sea, food, and drink. We want to show you how the anatomy of such gatherings looks like, Maltese BBQ style.

BBQ in Malta is not a cooking method; it is a way of life. Imagine this: a picturesque spot by the seaside with marvelous views of the Mediterranean; the sound of waves gently hitting against the shore; laughter of family and friends in the air. This is the essence of a Maltese BBQ.

 

Food forms the core of all get-togethers in Malta, and BBQs are no exception. Maltese sausages, often infused with garlic and coriander, are a feature at any BBQ, while marinated pork chops, with local herbs and spices, are also a favorite. Given our island's location, fresh fish is a must. Swordfish, sea bream, and mahi-mahi (lampuki) are locally caught fish and usually grilled to perfection with simple seasoning of olive oil, lemon, and salt. The skewers of marinated chicken, beef, or vegetables are popular due to the tastes that can be achieved, and the likes of bell peppers, zucchini, and eggplant all contribute to the great smokiness on vegetables from the grill. Do not forget the traditional Maltese ġbejniet (cheeselets), which are delicious when lightly grilled.

 

 

No BBQ is complete without an array of sides and snacks. Maltese bread, known as Hobz biz-Zejt, is dipped in olive oil and rubbed with ripe tomatoes, then topped with capers, olives, and tuna, making a perfect appetizer. Bigilla is a traditional broad bean paste served as an appetizer with fresh bread or crackers. Flaky pastizzi with fillings of ricotta cheese or mushy peas are crowd-pleasers and often make an appearance at any informal gathering.

 

To bring out the full delight of the culinary treats, refreshing drinks are a must. Kinnie, a cold soft drink brewed in Malta from bitter oranges and a blend of aromatic herbs, will top your list as a favourite on a hot summer day. The Cisk local lager is very light and thus quite enjoyable for all the delicious BBQ foods. Malta also produces really great local wines, both red and white, which go perfectly with BBQ products.

But perhaps, more than anything else, Maltese BBQs are known for the atmosphere of togetherness they create. It's more than just food; it's quality time. As the sun sets and the sky lights up in all its variations of pink and orange, there could be no better way to pass the time than sharing stories and guffawing away in the company of those we care most about.
